Made in the La Mancha region of Spain from the milk of sheep. Aged between 60 days to two years. Manchego has a firm and compact consistency and a buttery texture.
The aromas are fresh, lactic and slightly sheepy.
The cheese has a mild, distinctive flavour of curd, with a pleasant hint of acidity.
