Pesto Genovese 200ml – 6 to 8 servings
Vividly green, due to the copious amounts of freshly torn basil contained within, this is pesto the way it ought to be.
There’s enough in here for 6-8 servings of pasta. And for me it’s best stirred into spaghetti, linguine or trenette (if you can find it). It is a brilliant addition to our minestrone di primavera – just stick a heaped soup spoon full into the soup at the table and stir it in for a delicious flavour combination.
We now supply our Pesto Genovese in a handy glass jar, which re-seals for even longer freshness. It also freezes remarkably well – just make sure that you top off the remaining pesto in the pot with a decent covering of olive oil, seal the lid on and stick it in the freezer, and it’ll keep for a few months easily.
Portion into an ice-cube tray and freeze. Each cube represents an individual serving
