Farro is an ancient grain featured heavily in Etruscan and Roman cuisine as a useful source of protein.  It provides a creamy consistency to the soup in the same way pearl barley works in Scotch broth.

This Tuscan style vegetable broth with cannellini beans, chickpeas, borlotti beans and lentils is a truly fabulous winter soup.  With its high protein, fibre and vitamin content it is one of the most dietetically complete vegetarian dishes in the world.

A little tip: Serve with top-notch extra virgin olive oil and parmesan cheese.  Season to taste.

Ingredients: Farro (wheat), Cannellini beans, Borlotti beans, Chickpeas, Lentils, Extra virgin olive oil, Onions, Carrot, Celery, Leek, Rosemary, Chilli flakes, Garlic, Tomato paste, Salt.

Allergens: See ingredients in bold. Produced in a kitchen which handles milk, gluten, sesame, celery, lupin, nuts, eggs, soya, fish, mustard, peanuts, sulphites.

Storage: Keep in the fridge and eat within use by date on lid. Once opened consume within 2 days.

Cooking: Heat gently in a saucepan with a dash of olive oil warmed in the pan before the soup is added. (This helps to prevent the soup scorching.)

One pot serves two people.
